Cumin & Coriander Crusted Leg of Lamb with Garden Ratatouille

Ingredients:
For the Ratatouille:
• 2 Tbsp olive oil, for each sauté pan
• 2 large red onions, roughly chopped
• 2 red bellpeppers, roughly chopped
• 1 yellow bell pwpper, roughly chopped
• 4 Japanese eggplants, chopped into half-inch disks
• 4 small zucchini, chopped into half-inch disks
• 2 lbs tomatoes, blanched, seeded and chopped
• 2 Tbsp fresh Thyme
• salt and pepper, to taste

For the Lamb:
• 1 (5-6 lb) boneless leg of lamb, butterflied
• 6 cloves garlic, minced
• 3 Tbsp ground Cumin
• 3 Tbsp ground Coriander
• 3 Tbsp olive oil
• 1 Tbsp dry mustard
• 1 Tbsp pepper
• 2 Tbsp salt

Preparation:
For the Ratatouille:
Sauté onions in olive oil until translucent. Add red and yellow peppers and sauté until soft. Season to taste with salt and pepper. In another pan, sauté eggplant and zucchini until soft. Season to taste with salt and pepper. Add to onion and pepper mixture. Sauté tomatoes for ten minutes with fresh Thyme, salt and pepper. Combine with vegtable mixture. Set mixture in a colander over a saucepan. Reduce saucepan liquid by half until syrupy. Combine vegetables and sauce. Refrigerate.

For the Lamb:
Several hours before you plan to grill the lamb, combine the garlic, spices, olive oil, dry mustard, salt and pepper. Rub this mixture on both sides of the lamb and refrigerate.

Prepare the grill. Remove the lamb from the refrigerator and allow to come to room temperature. Grill lamb 7-8 minutes on each side. Let rest for 10 minutes, then thinly slice.

Serves 10-12.
