Enjoy a simple German home-style recipe for pork chops, a robust and hearty variation that’s rich in flavor.

It’s a filling dish that would go well with the subtle and rich flavors of this month's Aged Cabernet Series.

German-Styled Pork Chops

Ingredients:
• 1/4 cup all-purpose flour
• 1 tsp salt
• Several grinds black pepper
• 2 thick pork rib chops, roughly 3/4-inch thick or 10-12 oz. each
• 2 strips bacon
• 1/2 cup roughly chopped sweet onion
• 1/4 cup Riesling
• 1 cup heavy cream (or half-and-half)
• 1 Tbsp spicy brown mustard (German Düsseldorf if available)
• 1 tsp sweet paprika

Preparation:
Put the flour, salt and pepper into a small paper bag large enough to hold both pork chops. Rinse the pork chops and pat them dry. Put the chops in the bag, roll the top to seal tightly, and shake several times until the chops are well covered with seasoned flour. Place the floured chops on a plate and discard the unused flour.

Fry the bacon in a cast iron skillet over medium heat until it is crisp. Remove the bacon and set aside. Sauté the chopped onion in about 1 Tbsp of the bacon fat until translucent, reserving any extra fat.

Remove the sautéed onions to a dish. Using a little more bacon fat if needed, sauté the pork chops in the same skillet, turning occasionally, for 15 or 20 minutes or until cooked through.

Return the onions to the pan with the pork chops. Pour in the Riesling and stir to deglaze the skillet, scraping browned bits. Add the cream, mustard and paprika and cook for several more minutes until the sauce thickens slightly. Crumble the bacon and add it to the sauce, correct seasoning and serve.

Serves 2.
