Aged Cabernet Series Artisan Recipe - March 2013

This simple and easy to prepare dish is a great dessert or appetizer.  We suggest using a red fruity-type of wine that isn't too wooded.

 Pears in Wine

Peras Al Vino (Pears in Wine)

Ingredients:
• 3 cups red wine (or one bottle)
• 1 cup sugar
• 1 stick cinnamon
• 3 cloves
• 3 strips fresh lemon peel
• 3 whole black peppercorns
• 3 fresh pears, peeled, cut in half
• 1 pint fresh vanilla bean ice cream
• 1 cup whipped cream
• 1 bunch fresh mint
• nutmeg, to taste

Preparation:
Combine the wine, sugar, cinnamon, cloves, peppercorns and lemon peel in a mid-size saucepan. Bring to a boil until the sugar is dissolved, reduce heat and let simmer for few minutes.

Add the pears and let cook until soft, pouring the syrup on top occasionally. Place the half pears in a bowl, top with a scoop of vanilla bean ice cream, whipped cream, mint and nutmeg. Serve while hot.
