Aged Cabernet Series Artisan Recipe - October 2013

This Provençal dish, Gardiane, is a traditional stew of lamb and potatoes with herbs, Niçoise olives and a haunting scent of orange peel. Feel free to replace the lamb with beef. Lamb (or Beef) Potato Stew

Ingredients:
• Lamb shoulder steaks or sirloin, about 1.5 pounds if bone-in or 1 pound boneless
• 4 Tbsp olive oil, divided
• 6 sprigs fresh thyme, chopped
• salt and pepper
• 1/2 cup dry white wine
• 2 medium sweet onions, sliced thin
• 4 garlic cloves, peeled and sliced thin
• zest of 1/2 navel orange, minced
• 1 bay leaf
• 12 small new potatoes in their skins (or larger potatoes cut into 3/4-inch cubes)
• 6 black Niçoise olives, seeded and chopped
• 2 Tbsp flatleaf parsley, chopped

Preparation:
Debone and trim off as much fat and gristle as possible from the lamb or beef, cutting the lean meat into 1/2-inch cubes.

Sauté cubes of meat in about 2 tablespoons of olive oil in a heavy iron skillet. Sprinkle with fresh thyme and salt and pepper to taste. Cook until well browned. Place meat in bowl. Deglaze skillet with the white wine, scraping up all the browned bits. Pour these over the meat.

Put remaining olive oil in wiped skillet. Sauté the thin-sliced onions and garlic until they start to brown. Add minced orange zest, bay leaf and potatoes, stir and return the reserved meat and liquid to the skillet.

Reduce heat to low, cover, and let simmer for about 30 to 40 minutes or until the meat is tender and the potatoes are done. Add the olives for the last five minutes and garnish with chopped parsley in the serving bowl.
