International Selections Artisan Recipe - August 2013

Accordingly, the dish is traditionally made with beef heart (anticuchos de corazon), liver and other offal.  We figured you’d be just as happy to have our version with flank or flatiron steak, but feel free to add or substitute organ meat if you like.  Get past the offal, and we’re looking at a simple preparation - marinated meat, skewered and grilled - that will make a delicious and authentic match with your Chilean reds.(recipe courtesy of Robin Garr wineloverspage.com)

Steak Anticuchos

Antichuchos de Lomo (steah Anticuchos / Chilean Style)

Ingredients:

• 1 tsp dried oregano
• 2-3 cloves garlic, smashed
• 2 tsp ground cumin
• 1/2 tsp New Mexico or other spicy chili powder
• 3 Tbsp cider vinegar
• salt
• freshly ground black pepper, to taste
• 4 Tbsp olive oil
• 1 lb flank steak or flatiron steak (or all with beef heart, liver or other offal if you wish)
• 1/2 lb Spanish chorizo, cut into 1-inch lengths (or garlic sausage or even Polish Kielbasa)
• 2 fresh beefsteak tomatoes, peeled, seeded and cut into large cubes
• 2 red bell peppers, seeded and cut into 1-inch squares
• 2 red onions, peeled and cut into 1-inch squares


Preparation:
Put the oregano, garlic, cumin, chili powder, vinegar, salt, pepper and olive  oil in a large bowl. 

Put in the beef (and offal, if using) and marinate, refrigerated, for 2-4 hours or overnight. 

Put the beef, chorizo and chunks of tomato, peppers and onions on metal skewers, alternating ingredients. Reserve the marinade to use for basting.  Grill stovetop or over charcoal, turning regularly and basting occasionally, until well done.

This is not a rare meat dish.  Serve with salad or a green vegetable and French bread or rice.
