International Selections Artisan Recipe - May 2013

Shepherd’s pie might seem like a hearty English winter dish but add a Latin touch with herbs and warm, piquant spice, toss in some chopped hard-boiled eggs, and kick it up with Italian mozz’ or Parmigian’ or a little of both, and you’ve got a dish that’s recognizably Argentine. Pastel de Papas (Argentina's Shepherd's Pie)

Ingredients:

• 1 sweet white or yellow onion, chopped (enough to make 1/2 cup)
• 2 eggs, hard-boiled
• 2 Tbsp olive oil
• 1 lb. top-quality ground beef
• 1/2 tsp salt
• dried red-pepper flakes, to taste
• 1/4 tsp cinnamon
• 1/4 tsp nutmeg
• 1/2 tsp dried oregano
• 2 oz. Sicilian or Greek black olives, pitted and chopped
• 4 cups mashed potatoes
• 4 oz. shredded Mozzarella, grated Parmigiano-Reggiano, or a combinati


Preparation:
Preheat oven to 350°F.  Chop the onion, and peel the hard-boiled eggs and slice them into fairly thin rounds. Set aside.

Sauté the chopped onion in the olive oil in  a skillet over medium-high heat until it turns translucent but has not begun to brown. Add the beef, cook and stir for a few moments until it is browned.  Add the salt, red peppers, cinnamon, nutmeg and oregano while it cooks; when it is browned, check seasonings and stir in the chopped olives.

Lightly grease a 9x9 inch baking pan with a little more olive oil. Spread about half of the mashed potatoes evenly on the bottom of the dish. Then spread about half of the browned beef on top of the potatoes; put down about half of the egg rounds on top of that, and then spread on about half of the cheese. Top with the rest of the meat mixture, then the rest of the eggs, and finally, top with the rest of the mashed potatoes, spreading them evenly, and finish with the remaining cheese.

Bake in the preheated oven for 30-40 minutes. The dish will bubble and the cheese on top will brown.  Allow to cool briefly, and enjoy with your Tercos 2010 Malbec.
