Oak-Grilled Prime Rib

Oak-Grilled Prime Rib

This recipe was provided courtesy of Chef and Owner Frank Ostini of the Hitching Post in Santa Barbara County.

Ingredients

  • (2) 25-oz prime rib chops
  • olive oil, for brushing grill

For Basting Sauce:

  • 5 Tbsp red wine vinegar
  • 5 Tbsp garlic olive or vegetable oil

For Seasoning Salt:

  • 1 tsp freshly ground black pepper
  • 1 tsp freshly ground white pepper
  • 1 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 2 Tbsp granulated garlic
  • 3 Tbsp salt

Preparation

  1. Preheat an outdoor grill, preferably wood fired, with oak wood to medium heat.
  2. For the basting sauce, stir together the vinegar and oil in a small bowl. For the seasoning salt, combine all the ingredients in a small bowl. Brush both sides of the chops with the basting sauce. Oil the grill and place chops on the grill. Season the top side of each chop with the seasoning salt.
  3. Turn the chops before the heat pushes juices out the top (and continue to turn using this timing method throughout cooking). Baste and season after each turn, 4 times per side. Continue turning until the chops are done to your liking.

Leftover seasoning salt can be kept tightly sealed for up to 1 month.

My wife and I have enjoyed all the wines that have been shipped and will continue to do so.

I remember 1990 well. The California Wine Club’s concept was fresh, and Bruce and Pam were filled with passion for the wine industry. No one has done more for small family wineries since.
