Signature Series Artisan Recipe - August 2012

Most restaurants will serve Chicken Cacciatore with pasta, but using rice is common in Northern Italy.  Serve this dish with risotto or white rice cooked in broth.  The flavors of this dish is and ideal accompaniment to this month's Signature Series selections featuring award-winning reds from both Sonoma and Napa Valley! Chicken Cacciatore

Chicken Cacciatore

Ingredients:
• 6 chicken thighs
• 3 Tbsp butter
• 1 large onion, chopped
• 1 can (14.5 oz.) tomatoes, chopped or diced
• 3 cloves garlic, chopped fine
• 1 stalk celery, chopped
• 1 Tbsp dried Thyme
• 1 tsp fresh Rosemary, minced
• 1/2 cup dry white wine (preferred) or red
• 2 cups sliced mushrooms
• salt and pepper, to taste
• 2 Tbsp fresh Italian parsley, chopped
• 3 Tbsp olive oil, divided

Preparation:
Liberally pepper and lightly salt chicken to taste. In a large deep frying pan, heat butter and 1 Tbsp olive oil on medium high heat. Add chicken and brown on all sides turning occasionally, about 10 minutes. Slide chicken to side and add onions and celery, cooking and turning until onions are softened and translucent. Add the tomato, garlic, Thyme, Rosemary and mix well with other ingredients until heated. Add wine, and arrange chicken pieces around pan. Cover, lower heat and simmer for about 40 minutes. Turn the chicken pieces over occasionally.

Heat remaining oil in a pan on medium high and add mushrooms.  Cook, stirring occasionally until mushrooms have shrunk and browned. Set aside until chicken is finished simmering. Add mushrooms to chicken mixture, stirring throughout. Continue cooking uncovered for about 20 minutes to reduce liquid.

Sprinkle with parsley and serve!
