Signature Series Artisan Recipe - December 2013

This traditional Chilean dish, a bean and vegetable stew called Porotos Granados, celebrates the harvest season with a rich cornucopia of fresh vegetables. It's perfect for fall and will match perfectly with this month's Signature Series wines!

Harvest Stew

Ingredients:
• 1 medium onion, chopped fine
• 1 clove garlic, minced
• 1 tsp red chile powder
• 1/2 cup chopped mild green chile peppers
• salt
• pepper
• dried oregano
• 2 Tbsp olive oil
• 1-1/2 cups thick tomato sauce or chopped fresh or canned tomatoes
• 2 cups yellow corn kernels
• 2 cups butternut squash, acorn squash or pumpkin, peeled and cut into large cubes
• 15 ounces pinto, cranberry or lima beans, canned or cooked

Preparation:
Peel and finely chop the onion and garlic. Saute them in a large saucepan with a little olive oil until they’re translucent and starting to brown, adding the chile powder, chile peppers and salt, pepper and oregano to taste.

Prepare the tomatoes, corn and squash and add them to the flavored onions and garlic; add a little water if necessary to achieve the consistency of a thick stew. Reduce heat to very low, and simmer, stirring occasionally, for 30 minutes. Add the beans and warm through.

Serve with crusty bread and a Chilean-style salad of chopped fresh tomatoes and thin-sliced white onions flavored with salt and olive oil.
