Signature Series Artisan Recipe - July 2012

Gigot Boulangere

Ingredients:
•  Leg of lamb, about 4 lbs.
•  4 garlic cloves, chopped
•  2 oz. butter
•  1 Tbsp chopped fresh thyme or 1/2 Tbsp dried
•  salt
•  pepper
•  1/4 cup white wine
•  2 large onions
•  4 medium baking potatoes
•  2 bay leaves

Preparation:
Preheat oven to 500ºF.

Cut slits all over the lamb and poke bits of garlic into them with the point of a knife. Soften the butter by rubbing it between your hands, and rub it and the thyme into the surface of the lamb. Salt and pepper to taste, then put the lamb into a lightly greased roasting pan, fat side down. Put it in the oven, reduce the heat immediately to 450ºF (225C), and roast for 30 minutes. Then turn the lamb over so the fat side is up, and roast for another 15 minutes. Pour off any accumulated fat in the pan, add the white wine to the pan, and cook for 15 minutes more (a total of 1 hour to this point).

While the lamb is roasting, slice the onions into thin rounds and cook them in a bit of olive oil (use a nonstick pan if you wish to use less oil) for 5 to 10 minutes or until translucent. Peel and slice the potatoes thin and add them and the bay leaves to this pan with salt and pepper to taste.

Take the lamb out of the oven and carefully move it to a large plate. Put the onions and potatoes in the roasting pan, stirring to coat them with cooking juices, then put the lamb back on top of them. Reduce heat to 400ºF and cook for 30 minutes more or until a meat thermometer poked into the deepest part of the leg registers an internal temperature around 140ºF for rare.
