Signature Series Artisan Recipe - June 2013

The recipe comes courtesy of Muns Vineyards, featured in this month's Signature Series. "I forage for wild mushrooms in the Santa Cruz Mountains, including boletes, chanterelles, and other edible fungi. I am a member of the Fungus Federation of Santa Cruz, and I have made this dish for the FFSC's annual Wine & Mushroom dinner.  Pasta with Wild Mushrooms and Sausage

Pasta with Wild Mushrooms and Sausage

Ingredients:
• 2 Tbsp shallots
• 1-2 cloves garlic
• olive oil
• 1 lb. Turkey/Apple/Cinnamon sausages
• 8 oz. wild mushrooms (Chanterelles or Black Trumpet; or you can use Porcini, Portobello, Crimini or Shiitake; and you can add more if you want)
• butter
• salt and pepper, to taste
• 1 can chicken or vegetable broth
• 4 oz. Mascarpone cheese
• 1/4 tsp thyme
• 1 box/package pasta (your choice; I use multigrain)

Preparation:
Sauté the shallots and garlic in olive oil. You want to add flavor but not overpower the mushrooms. You can use more shallots and garlic if you want, but Chanterelles especially have a delicate, fruity flavor and I would use less seasoning and allow the mushrooms to shine. Set aside. Cook the sausages; set aside. Clean, chop and sauté the mushrooms in butter and olive oil until well done; add salt and pepper to taste. 

Add the sautéed shallots and garlic to the mushrooms. Add the can of broth, heat through and stir in the Mascarpone. Slice up the sausages and add to the mushroom mix. Add the thyme. Cook your pasta, and serve with the mushrooms and sausages.

Pour a glass of your Muns Vineyard Pinot Noir to enjoy with your dish.

Variation using Chanterelles:
• Substitute mango sausage from Trader Joe's, or another sausage with fruit.
• Substitute chanterelles for the other wild mushrooms.
• Add 1/2 can corn (or frozen), and some artichoke hearts (canned or marinated)
• Eliminate the thyme, and use ground coriander instead.
