Signature Series Artisan Recipe - March 2013

Pinot Noirs are best when paired with simple, yet rich foods, so it was no surprise that Pinot's pair beautifully with salmon.  This quick and easy recipe is a snap to make and be sure to pop open the Lafond Winery 2007 Pinot Noir with this one.  It's one of four award-winning wines featured in this month's Signature Series. Salmon Tartar

Salmon Tartar

Ingredients:
• 8 oz sushi grade salmon filet, diced small
• zest of 1 lemon
• juice of 1/2 lemon
• 1 shallot, finely minced
• 1 Tbsp of pink peppercorns
• 1-2 Tbsp of extra-virgin olive oil
• fresh chives, minced
• fresh basil, minced
• sea salt and fresh ground pepper, to taste

Preparation:
Mix all together in a bowl. Let set so flavors can permeate. Serve on thick slices of cucmber or crostini.
