Aged: 9 Years
The brilliant ’05 is aging gracefully, and is slowly evolving from its original color, aroma and taste. It offers decadent sweet tannins and a long finish. It is nowhere near its peak and will continue to age beautifully for another five to seven years.

Parker, Jr. (December 21, 2007): “...the brilliant 2005 Cabernet Sauvignon boasts a deep ruby/purple color as well as an elegant perfume of spring flowers, black currants, licorice, cedar, and subtle toasty oak. It is medium to full-bodied with sweet tannin, and a long, authoritative, elegant finish. It should drink beautifully for 15 or more years.”
Pair with two-year aged Iberico or Manchego cheese from Spain, Delice from Bourgogne or St. Andre from Coutances, Normandy, France. Grilled Calabrese sausage (the Italian version of Chorizo); Bone in Rib Eye or Porterhouse or Rack of Lamb all cooked rare to medium rare.
