Basic Barbecue Sauce

Basic Barbecue Sauce

From Wine Spectator - June 30, 2002 (adapted from How to Grill from Steven Raichlen)

Ingredients

  • 2 c ketchup
  • 1/4 c cider vinegar
  • 1/4 c Worcestershire sauce
  • 1/4 c firmly packed brown sugar
  • 2 Tbsp molasses
  • 2 Tbsp Dijon mustard
  • 1 1/2 Tbsp Tabasco
  • 1 Tbsp chili powder
  • 2 tsp liquid smoke
  • 1/2 tsp freshly ground black pepper
  1. Combine all ingredients in a nonreactive saucepan. 
  2. Bring to a boil over medium-high heat.  
  3. Reduce heat to medium and simmer 10-15 minutes, or until sauce is dark, thick and rich. 
  4. Adjust sweetness, sourness and hot pepper to taste.

I've been a member since the mid-90s when my team at work gave me a membership. I am now getting shipments every quarter and I continue to enjoy (and periodically reorder) the wines. The selections themselves are truly outstanding. I did have an issue with my membership which is 'white wines only'. In particular, I only want Chardonnays...period. No Sauv Blancs or others, so I think that's now straightened out.
