Prep Time: 10 Minutes

Cook Time: 2 - 3 Hours

Yield: Serves 2 - 3

This is a re-creation of Julia Pedroncelli's Bollito or Boiled Beef. It is very simple and a great accompaniment for a glass of red wine.

Ingredients

  • 3 beef short ribs

  • 1 large onion, chopped

  • 2 medium carrots, peeled and chopped

  • 1 cup mushrooms or other vegetables like celery, chopped

  • 5 cups of water

Preparation

  1. Place all ingredients in a large pot and bring to a boil.

  2. Simmer covered for 2-3 hours, until meat is falling off the bone.

  3. Season to taste with salt and pepper.

  4. Serve meat in soup or sliced with mustard.
