This is a re-creation of Julia Pedroncelli's Bollito or Boiled Beef. It is very simple and a great accompaniment for a glass of red wine.
3 beef short ribs
1 large onion, chopped
2 medium carrots, peeled and chopped
1 cup mushrooms or other vegetables like celery, chopped
5 cups of water
Preparation
Place all ingredients in a large pot and bring to a boil.
Simmer covered for 2-3 hours, until meat is falling off the bone.
Season to taste with salt and pepper.
Serve meat in soup or sliced with mustard.
