Carrot Garlic Mashed Potatoes

Yield: Serves 4-6

This delicious side dish was shared by Pedroncelli Winery as part of their complete holiday menu.

Ingredients

  • 8 red skinned potatoes, cleaned and cut into chunks

  • 4 medium carrots, peeled and cut into chunks

  • 2-3 medium garlic cloves, peeled

  • ¼ cup unsalted butter

  • ¼ cup sour cream

  • ¼ cup cream cheese, softened

  • salt & freshly ground pepper, to taste

Preparation:

1. In a medium saucepan add the potatoes, carrots and garlic, cover with water and bring to a boil over medium-high heat. Turn down to simmer and cook until done, about 15-20 minutes--don’t overcook.

2. Drain the potato mixture and add the butter, sour cream and cream cheese. Mash together, adding more butter or sour cream as needed for smooth texture. Salt and pepper to taste.

3. Keep warm in oven at 300 degrees for 10-15 minutes. Serve.
