Fresh Scallops with Angel Hair

Fresh Scallops with Angel Hair

Yield: Serves 6

Ingredients

  • 2.5 lbs fresh sea scallops, cut into quarters

  • 3 Tbsp butter

  • 1 1/2 cloves garlic, minced

  • 2/3 cup white wine

  • 3 Tbsp fresh squeezed lemon juice

  • 2 Tbsp fresh chives, chopped

  • salt and pepper, to taste

  • 1 lb angel hair (cooked per package directions)

  • 1 Tbsp fresh parsley, chopped

     

Preparation:

  1. Rinse and drain scallops in cold water.
  2. Add butter to large skillet and melt over medium-low heat. Add scallops and cook over medium-high heat 5 to 6 minutes, stirring constantly. Remove scallops using a slotted spoon and set aside.
  3. Add garlic to pan and cook for 30 seconds to 1 minute. Add wine, lemon juice and chives. Cook over medium heat 2 minutes, stirring occasionally. Season with salt and pepper, to taste.
  4. To serve, toss scallops and sauce with noodles and sprinkle with parsley.
