The promise of great wine is fulfilled with co-founder/winemaker Daryl Groom. He is an acclaimed international winemaker with more than 30 years of experience; nine “Winemaker of the Year” awards; judging posts worldwide; and executive experience at top tier wineries such as Australia’s Penfolds.
Tasting Notes: G’day to a blockbuster Australian Shiraz chockful of black fruits on the nose and palate. Daryl dubs it “silky, sexy and beckoning to have that second glass.”
Tasting Notes: Chill it, swill it, swoon. A lengthy vintage created this wine bursting with flavors and fragrances of apple, citrus, fig and pear. Very easy to drink.
Head-trained Zinfandel vines (aka “bush vines” Down Under) yield deeply flavorful fruit. “We go through and drop unevenly ripened bunches, always shocks my brother-in-law and Vineyard Manager David, a bit of tightwad."
“Shiraz here is naturally low yields, so no need to drop crop,” notes Daryl. The 2011 vintage saw much cooler temperatures than several previous years. Harvest was late. “We pick around 24.5 brix to reach about 14% alcohol for a little more elegance.”
