Lamb Shish Kebabs

Lamb Shish Kebabs

The delicious flavor of the kabobs is a combination of both the lamb and the marinade.  This recipe is very easy to make and perfect for those impromptu grilling sessions.  The bonus...it pairs perfectly to the smooth flavors of Aged Cabernets.  Pair with either the Sbragia 2006 Napa Valley Cabernet or the Trefethen Family Vineyards 2006 Oak Knoll Cab.

Ingredients

Marinade

  • 1/2 lb. thinly sliced onions
  • 1/3 cup sherry
  • 2 Tbsp olive oil
  • 1 Tbsp salt
  • 1 tsp oregano
  • 1/2 tsp black pepper

Kebabs

  • 2 lb deboned leg of Lamb, cut into 1-inch cubes
  • 1 pint cherry tomatoes
  • 2 onions, sliced
  • 12 button mushrooms
  • 2 bell peppers, sliced
Combine all marinade ingredients and mix thoroughly. Add lamb and marinate for several hours or overnight, turning occasionally.  Thread the meat on skewers alternating with cherry tomatoes, onions, mushrooms and bell peppers.  Grill over charcoal or in the broiler until they are brown on all sides, approximately 6 minutes.  Serve on a bed of rice pilaf and enjoy!
