Macadamia Nut-Encrusted Halibut

Macadamia Nut-Encrusted Halibut

Cook Time: 20 Minutes

Yield: Serves 2

Recipe shared by Shannon Ridge Winery. Pair with their 2016 Lake County Chardonnay.  Note: Marinating time is 30 minutes.

Ingredients

  • 1 10 oz halibut fillet 
  • 1/2 cup fresh lime juice
  • 1/3 cup panko
  • 1/4 cup chopped macadamia nuts
  • 1 tsp fresh cilantro, minced
  • salt and pepper, to taste
  • 4 Tbsp (1/2 stick) unsalted butter, melted, divided 

Preparation

  1. Marinate the halibut in the lime juice for 30 minutes.
  2. Preheat oven to 350°.
  3. Combine panko, macadamia nuts, cilantro and salt. Mix in 2 tablespoons butter. Season with pepper.
  4. Pour remaining 2 tablespoons butter into shallow baking dish. Remove halibut from marinade and place in baking dish, turning to coat with butter.
  5. Spoon panko and macadamia nut mixture and press gently onto fish.  Bake until fish is cooked through, about 20 minutes.
