Marinated Shrimp on the Barbie

Throw another shrimp on the barbie? What could be more Australian than that? Given the California-like climate that blesses much of the populated coasts of the lovable land Down Under, it’s not surprising that the charcoal grill (affectionately dubbed the “barbie”) plays a central role in Australian cuisine.

The good folks at Groom Wines suggest serving their Adelaide Hills Sauvignon Blanc with seafood and spicy cuisine. This simple dish scores on both points. We recommend it. And do go for the best quality shrimp you can find.  Ingredients matter!

 

 

Ingredients

  • 1 lb raw jumbo shrimp or large prawns, washed and deveined, with shells on

For the marinade:

  • 1⁄4 cup olive oil
  • juice of one lemon
  • 1 small onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 1/4-inch slice of raw ginger, peeled
  • dried red pepper flakes, to taste
  • salt and black pepper

Preparation

1. Process all marinade ingredients in a blender or food processor. Marinate shrimp in the marinade in a covered bowl in the refrigerator for 1-2 hours.

2. Remove shrimp from marinade and sear on the grill until just cooked through, 4-7 minutes, depending on size.

Serving Suggestion: Serve with rice, a salad, and your Groom Wines Adelaide Hills Sauvignon Blanc.
