Pork Tenderloin with Glazed Onions

This Pork Tenderloin with Glazed Onions recipe comes from Taste of Home. It is best paired with Nagy Wines 2011 Pinot Noir.

Ingredients

  • 4 large sweet onions, sliced, (about 8 cups)

  • 1/4 cup butter, cubed

  • 1 cup chopped dried apricots or golden raisins

  • 1/4 cup packed brown sugar

  • 1/4 cup balsamic vinegar

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 pork loins, (1 pound each)

  • Olive oil

  1. In large skillet, sauté onions in butter for 2 minutes.  Stir in the raisins, brown sugar, vinegar, salt & pepper, cook until onions are tender.
  2. Place pork tenderloins on a rack coated with olive oil in a shallow roasting pan; top with onion mixture.
  3. Bake uncovered at 425°ree;F for 20-27 minutes or until meat thermometer reads 145°ree;F. Let stand for 5 minutes before slicing. Serve with onion mixture.  Pair with Pinot Noir
